The back has two coats. The neck has three.

The Danish Oil looks good and does a fair job of protecting from moisture, but any spar varnish finish is soft and penetrates more than it builds, so it doesn't offer much in terms of impact protection.
I'm going to start off with some shellac and see how that works. I it's still not hard enough, I may do a lacquer top coat.

Beginning the shellac. This stuff is thinned with alcohol, so it's very runny and it evaporates almost instantly. I apply it with a rag. I can hit it with maybe ten passes or so before it feels a little gummy. I quit at that time and allow it to harden some more, polishing all the while.

It begins to take on a gloss almost immediately. The grain will fill as I continue adding more coats.

This finish changes more with light and angle than about anything.

Here, you can see the outline of the grain but its completely black.

The shellac is beginning to build a little. I think I need to quit and let it cure a while.
