Question: Do you like wet eggs?

Good eggs from your cooky backyard chicken coworker... cooked over easy, in the grease from the bacon you started earlier. With buttered rye toast and cafe bustelo.

Why complicate perfection?

On again off again on again olive oil off again heat in the pan spin around 3 times creme fraische ohferfecks sake.

Scrambled eggs are the best. Put a chunk of real butter in your pan as it heats. Scramble your eggs in a bowl with a nice shot of whole milk or half & half. Add pepper. No salt needed, as the butter has salt. Scramble on medium low. Like others mentioned, pull your pan off of the stove just before they get done & serve.
 
I add water or milk to my scrambled eggs. I load the eggs with lots of other ingredients if it's a brunch situation.

-My friend’s older sister giving us an unsolicited sex ed lecture when we were 12 and she was 19. The wall paper peeling southie accent is required for the full effect. Applies to eggs too, I guess.
