Question: Do you like wet eggs?

They’re just a touch wet when I take them off the heat. So when I eat them, they’re perfect. Not wet, perfect.

Eggs are important.
 
A lot of you guys are confusing runny eggs with wet eggs. I’m not talking about runny eggs damnit, why would you even fucking think of that? What’s your fucking problem? The fucking eggs are wet or they’re not, do they have liquid shimmering on top of them? And I’m not talking about the running part, holy shit. Get a fucking clue.

I don't do poached or soft boiled. I do "not quite scrambled", meaning stirred up in the pan, or briefly in a bowl beforehand, usually with mexi type veggies and spices for a burrito, or mostly chili powder for on toast. Sometimes a leave it a little runny. Or I do full scrambled, then usually a little wet. Maybe just a little more than @Tig .

i love scrambled too. heck, i just like eggs.....almost anyway.
i love omlets too.
 
My Auntie from Ireland makes creamy scrambled eggs.
They are a favorite of mine.
 
Yeah, I love great scrambled eggs, but it's one of the most temperature sensitive and just overall needy dishes I make.
I actually got a lot of inspiration a while back from the same Gordon Ramsay video @Lerxst posted. He takes it a little over the top, but that delicate dance of pan temperature really takes them to another level.
 
Well, not like my grandma used to make them. Both my grandma's were not exactly marvelous in the kitchen, to the point where I usually cooked when I went over :embarrassed:

But a well made wet egg is glorious.
 
ramsey's method works well but is needlessly overcomplicated; if all the on-the-heat-off-the-heat-etc is stressing you out just leave them on the heat but cook them at a lower temp (from the beginning). all the on-again-off-again is accomplishing is cooking them more slowly at a lower temp; there's nothing magic happening because of the increase/decrease in heating.
