Question: Do you like wet eggs?

ramsey's method works well but is needlessly overcomplicated; if all the on-the-heat-off-the-heat-etc is stressing you out just leave them on the heat but cook them at a lower temp (from the beginning). all the on-again-off-again is accomplishing is cooking them more slowly at a lower temp; there's nothing magic happening because of the increase/decrease in heating.
Correct. And pull them (plate) just before they are where you want them. They will continue to cook (firm up) just a bit even on the plate.

True story. The on off is just a reminder if you tend to cook everything on high. I’m fairly certain I’ve modified it to an all low heat thing in practice. Ramsay’s method is a good way to learn what outcome you’re looking for. Then you can take shortcuts to reach the same results with less fuss.

Mrs. Roach is a big offender here. It's so hard for me to bite my tongue and not jump in and start mansplaining proper egg cookery to her. :ack:
 
A poached egg beats scrambled every time, and twice on Sunday. They are easy as hell to make, and come out perfect every time.
 
I hate scrambled.

I like fried (over medium, preferably, but over easy is fine too.)

I like omelets.

And I like soft-boiled.

If I do soft-boiled, though, I usually just cook them sous-vide overnight. Makes a hell of a lot of sense when you’re cooking enough eggs for 5+. Especially when you’re doing bacon as well, because sous-vide bacon is the best.
 
I love scrambled wet, poached, over medium, but a 6 minute egg is probably the greatest egg form ever. Yolk the consistency of molasses is just magical.
 
I actually like the Vietnamese version of the embryo eggs that are a street food of the Philippines. I guess it's much like a bird abortion. Sounds gross, but it actually tastes really good.

Durian tastes good, just smells like skunk roadkill

Also the Vietnamese marinate their eggs in something, so they're brown and taste good. First time I had them no one told me what they were until after I ate 3 of them.

A lot of you guys are confusing runny eggs with wet eggs. I’m not talking about runny eggs damnit, why would you even fucking think of that? What’s your fucking problem? The fucking eggs are wet or they’re not, do they have liquid shimmering on top of them? And I’m not talking about the running part, holy shit. Get a fucking clue.
