Stuffed Red Peppers

Decided to fix a little something different tonight. I made some stuffed Red peppers and they are absolutely delicious. Made with ground turkey instead of beef but damn there good.

One of those old school classic comfort dishes. In particular, stuffed peppers are an item of particular disagreement on the "right way" to do them. Be it near-roasting them at a fairly high heat, low and slow, your general 350, blanching/steaming the peppers beforehand, to keep whole or slice peppers in two, what ratio of rice to beef(in your case turkey), if it's acceptable to add more ingredients such as peas or corn, etc etc. People take their stuffed peppers serious. And then there is stuffed cabbage, much the same arguments.

It also had rice, black beans, shrooms, tomato, onion, corn, more chopped pepper, lol, with a hint of cheese and enchilada sauce
 
That sounds good! I made some a couple weeks ago, I didn't even put rice in them, just a filling I made with ground beef and cream cheese, seasoned with black and cayenne pepper and some onions. Grilled. I did some poblanos, some bells and some jalapeños and wrapped the jalapeños in bacon.

My wife made stuffed poblano peppers tonight. No meat in them, but they were delicious nonetheless. Poblanos seem to vary widely in heat levels, even if you buy them at the same time, which I find is part of the fun of eating them.
 
I've never made my own.

What's ya'alls recipes?

And yes, I can say ya'all. I lived in SC for 6 years :embarrassed:
