Speaking of pizza ingredients, I love carmelized onions on pizza, but don't really care for raw onions on pizza.
Why is it that pizzaria's can't cook their onions prior to using them? Is it that hard/time consuming/not enough profit in it?
Lots of pizza places don't have traditional prep spaces, especially if they're a small chain or a place that doesn't offer many other options. The best caramelized onions are made on a plancha and take time, but they don't store long before turning to slimy mush. Caramelization takes a lot longer than throwing some onions on the grill and getting some char... breaking down those fibers and releasing the natural sugars means low to moderate heat and then time.
