Lunch: Barbacoa!!!

Basically you sear some chunks of pork shoulder, put it in a dutch oven with some citrus, spices and a can of coke. Yes, a can of coke, that distinctly Mexican ingredient. It slow cooks in the oven for a few hours, then you pull the meat apart and put it back in the oven without the lid a while so it absorbs the juices and gets some crispy bits.

You know what got her to quit eating them? Not the fact that they were unhealthy but the fact (that her brother and I learned on his field trip last week) that a lunchable container can take almost 200 years to degrade in the ocean.


My daughter was into Sid the Science Kid about that age, and they had an episode about "the habitat." She has been pretty environmentally conscious ever since. This is a good idea. Her mom still gets her lunchables from time to time and while I'm more concerned with the lack of good nutritional value, I'll let her know this and see if she'll stop asking for them.

Yeah. the nutritional element of them is what we didn't like. Unlike her brother my daughter is pretty picky with her food so getting her to try anything new is a major deal.

Take a picture of the recipe with your smart phone and load that shit up. I love carnitas waaaaaaay more than i love copy rite laws.

With the barbacoa recipe, I read that everything goes in to the slow cooker, but those onions and the cilantro look raw.

Did you add those to the taco as well as cooking some with the meat?
Or one or the other?

no...they don't go in the cooker, you just top the taco with them taqueria style. its beautiful :embarrassed:

Wow. Mark was not exaggerating folks, this recipe rocks! Succulent and fall-apart tender, well that's a given, the slow cooker gives you that. The flavor is really great. Depth of flavor, as the food porn hosts say on TV. And with minimal effort and cleanup.

I served it with fresh cooked corn tortillas and the standard chopped onions and cilantro, and a variety of hot sauces. It was a crowd-pleaser. Even Mrs. Roach liked it, and she hates everything.
