Homebrew dark saison. Took a classic porter recipe, made some grain sub's and threw it on some imperial Organic rustic yeast. Fermented nice and moderately dry.

Split the yeast on another saison brewed with barley, rye, spelt & oats with a little more aggressive hop profile. Both beers are home runs.

Turns out it's excellent! Like a good, smooth bourbon, light on the cornsweet flavor.
