Everybody loves a good pot roast. It's perhaps the ultimate main-course comfort food. I have a strong preference for brisket or chuck as the star.

I have been using Julia Child's recipe for Bouef Bourginon for years. Makes my tastebuds jump for joy. Nowadays I usually make it with a chuck roast and it comes out decent. Once I tried making some with a leftover hunk of BBQ brisket. The experiment did not work.
