Cheese Grits

I kind of made this up last night with stuff from around the house. It turned out pretty awesome.

2 tbsp. olive oil
1 small onion, chopped.
1 carrot, chopped.
2 garlic cloves, chopped.
4 or 5 large fresh basil leaves, chopped.
4 or 5 vine ripe tomatoes, chopped (skinned first if you have that kind of patience)
Handful of fresh sliced baby bella mushrooms.
Half pound of sweet Italian sausage (not links - you can buy this stuff in packs like ground beef).
Italian Seasoning (to taste)
0.5 cups water
2 tablespoons of mascarpone cheese
pinch of salt

Heat the olive oil in a large sauce pan over low heat, and then drop in the sausage, onion and carrot. Saute on low for about 6 minutes and then toss in the mushrooms and garlic and keep going for about 4 more minutes. Stir occasionally. Keep the heat low enough not to brown the onions. The sausage should brown and separate kind of like ground beef.

Drop in the chopped tomatoes and the water and the salt. Bring up the heat just high enough to simmer. Cover the pot and keep the heat low, because you're going to cook for another 10-15 minutes. The tomatoes will break down and the chunks will basically disappear, which is why it would have been nice to have skinned the tomatoes before starting.

Toss in the basil and the Italian seasoning. Keep simmering over low heat for a couple minutes. You'll know when the sauce looks like sauce.

Turn off the heat and mix in the mascarpone cheese.

You'll end up with a creamy tomato sauce with sweet sausage.

There is lots of down time wile simmering, so make sure to surf the Internet for pron or boil some pasta.

That sounds amazing. Anything with tomato and basil is bound to be chock full o' win.
 
FWIW if you don't have the time to simmer your sauce all day, adding a little bit of tomato paste really gives you an awesome depth of tomato flavor.

My typical quick sauce is just:
Tomatoes
Tomato paste
Garlic
Onion
Basil
Oregano
Salt
Sugar
Olive oil

I was trying to avoid anything in a can. My father in law has a big sodium problem, so I'm working on an all fresh sauce where I can really control the salt content. Our sauces sound pretty similar though.

Also, my total simmer time was probably about 25 minutes. :)

You can also buy paste in a tube :wink:

For future reference you can peel tomatoes super fast if you dunk them in boiling water for about :30 to a minute, then immediately put them in ice water. The skins just shrivel up and you can pick them off no problem.

My wife said just about the same thing, and it was news to me. I'd like to try it next time. Thanks! :)
