Kick Henry Jackassowski
Ok, my birthday was last week but I am just now getting around to posting. We had about 45 people over for the festivities. We supplied the meat and beer and we had some folks bring sides.
About the pork. I smoked 4 pork butts - I think it worked out to about 30lbs. I made two with a typical dry rub that I use. Actually I took one of my dry rubs and added some brown sugar. I did the other two with a more spanish flavor. Marinaded in mojo, onions and lots of garlic stuffed into nooks and crannies. Total cooking time was about 15 hours. I used chunk charcoal and some hickory. I like cooking with oak but didnt have any.
About 8 hours in:
We also bought a keg. We dont normally do that but figured it fit the summer cook out theme.
Neighbors brought baked beans that had all kinds of stuff in them, home made cole slaw, an amazing strawberry salad, corn on the cob, homemade mac and cheese, etc. Birthday cake for desert along with a bunch of cupcakes and stuff.
Everyone left stuffed and happy.
