Anybody who uses a plastic cutting board does not deserve good knives...
Most plastic cutting boards are fine with good knives. The hard plastic that trashes the edge is rarely used. Plastic is popular in restaurant kitchens because it can be washed in a dishwasher to sterilize it and get rid of the taste and smell of garlic and onions. I use my Japanese knives with plastic cutting boards and they’re holding up fine.

Bamboo, on the other hand, is to be avoided.

I've gotten really concerned with ingesting microplastics and we are phasing out plastics in all aspects of food preparation and storage at Casa bsman. I figure cutting shit on a plastic cutting board with a nice sharp knife is the best way to ensure you'll have lots of lovely microplastic particles in your food. These days we're even using reusable silicone bags in place of the ubiquitous baggies.
